We are talking about a dessert inspired by oriental pastries : THE crinkle filo cake. Infinitely adjustable (with fruits, nuts, pistachios…), this pastry shop greedy And crispy can only do us salivate with pleasure ! That’s why we decided to tackle this dessert and share with you our crinkle filo cake recipe!

Crinkle filo cake recipe

Ingredients for 6 cakes:
For the syrup:

For the caramel:

  • 30g salted butter
  • 4 tbsp fresh cream
  • 15 sugar cubes
  • 10 cl of water

For the rest :

  • 80g butter
  • 60g of sugar
  • 12 sheets of filo pastry
  • 2 eggs
  • 150g milk
  • 150 g full cream
  • hazelnut chips

Preparation :

Take a mold for 6 muffins and butter it. Keep aside.
take two filo sheets and overlap them.
Fold both leaves together before rolling them up and putting them in the mold. Do the same with others filo sheets.
Melt it butter. Cover each cake of butter melted and sprinkle with sugar.
Put in the oven for 10 minutes at 180°C.
Meanwhile, prepare the caramel. To do this, in a saucepan over high heat, pour the sugar and thewater.
Wait for the sugar caramelize (dark blonde) before removing from heat.
Add 30g of salted butter and mix.
Put the pan back on low heat this time and add 4 tablespoons of sour cream.
Mix well until the cream be smooth. THE caramel is ready !
In a salad bowl, beat the eggsTHE milkthere creamTHE sugar and 2 tablespoons of caramel together.
Pour this mixture over the cakes always in their mould. Please note that this does not have to completely cover the filo sheets.
Put in the oven for 30min (always at 180°c).
Meanwhile, prepare the syrup. To do this, bring to a boil thewater and the sugar in a pot.
Then pour the syrup on the cakes.
Unmold your cakes before pouring over each of them a tablespoon of caramel.
Sprinkle with broken roasted hazelnuts.
