Former Top Chef candidate Diego Alary has published a recipe that will please all vegetarians. The young chef suggests making yakitori skewers, not with beef but with aubergine. Follow the leader !

He has more than one recipe in his pocket. Leader Diego Alary just shared a new recipe on his social networks. The young chef who counts more than 3.3 million followers on TikTokand who became known to the general public thanks to the show Top chefshared his vegetarian recipe for yakitori skewers. You know, those Japanese skewers traditionally prepared with chicken and coated in a caramelized sauce made from sake, sugar, soy sauce and mirin (a rice wine).

For this new preparation, Diego Alary has chosen to revisit the beef and cheese yakitori replacing the meat with eggplant. A lighter recipe that has nothing to envy to its other variations. Roll up your sleeves and put on your apron!

The recipe for yakitori skewers by Diego Alary

Ingredients :

For the dish:

  • 2 eggplants
  • Emmentaler or Gouda cheese
  • 3 spring onions


For the sauce:

  • 200g salty soy sauce
  • 200g sake
  • 100g mirin
  • 50g sesame oil
  • 1 clove of garlic
  • Ginger

The preparation :

Cut the aubergines into thin slices with a knife or a mandolin.

Place them in a dish.

In a skillet, combine the salty soy sauce, sake, Mirin, sesame oil, minced garlic clove and grated ginger.

Reduce this sauce for 5 minutes before pouring over the eggplant slices and marinating for 30 minutes.

Cut rectangles of cheese.

Prick with skewers.

Wrap the cheese skewer with the marinated eggplant.

Grill the yakitori skewers on a pan with a little oil. Each side should be cooked for 1 minute.

A little advice from the chef: A blow of the blowtorch on top to have a little more smoky taste.

Cut the spring onions then place them on the skewers.

To accompany the yakitori skewers, you can prepare white rice.
