Carefully designed to offer attendees a unique format of culture and lifestyle experiences, The Peninsula Academy offers a selection of guided, fun and gourmet activities, held behind the scenes of the hotel.

This immersive program offers four experiences to suit everyone’s tastes and interests: discovery of the vegetable garden on the hotel’s roof alongside Executive Chef David Bizet, wine tasting with Head Sommelier Florent Martin, gourmet creations with Pastry Chef Anne Coruble, and making traditional Dim Sum in the kitchens of the LiLi restaurant with Chef Taklau Yuen, a specialist in Cantonese cuisine.

Discovery of the secret vegetable garden on the roof of the hotel

Nestled at 7e and top floor of the hotel is a small setting away from the hustle and bustle of the city. In this vegetable garden, participants can touch, smell and taste the different varieties of herbs and edible flowers grown on the roofs of the Peninsula Paris.

A confidential meeting with the Executive Chef David Bizet, who shares with the communicative passion that characterizes him his love of the product, their seasonality, their maintenance, and even a few recipe secrets… Together, the guests create and taste instant pairings full of freshness before continuing the adventure at the gourmet restaurant L’Oiseau Blanc for a starred lunch around contemporary French cuisine, mastered with delicacy and precision with the greatest respect for French local products. The sommellerie team will also offer during this lunch a selection of wines that combine with finesse and accuracy with the cuisine of Chef Bizet.

Melody of the senses around wine

Head Sommelier Florent Martin, voted Best Sommelier of France 2020-2021, invites lovers of wine-growing terroirs to discover the great wines of today and the talents of tomorrow.

Around a variation of 4 wines belonging to the same great taste theme, the guests learn to detect the most subtle aromas of these fascinating nectars and let themselves be transported by an educational and progressive tasting of tasty bites created to measure around each glass. .

They will discover that surprisingly, it is possible to build a menu, from the appetizer to the dessert, around one and the same wine profile, as these vintages can be as different as they are complementary.

The most gourmet of Parisian parentheses

Creamy spread, crunchy cookies with two chocolates, or soft brioche dough and sugar crystals… The most gourmet recipes of the palace on Avenue Kléber reveal all their secrets !

This workshop offers participants the opportunity to put on the apron of the Peninsula Paris pastry chefs and discover the enchanted world of Pastry Chef Anne Coruble, with family or friends, for an afternoon.

This tasty moment ends with the tasting of the unmissable Tea Hour in the restaurant Le Lobby, whose historic decor immerses its guests in a timeless cocoon, before leaving with their arms full of their gourmet creations.

The Art of Dim Sum

Asian cuisine lovers have the opportunity to dive into the world of Cantonese gastronomy and let themselves be carried away by the flavors of the Orient.

Chef Tak Lau Yuen, at the helm of the LiLi restaurant, accompanies participants step by step in making dim sum, small traditional steamed dumplings, with such a delicate technique. Ha Kao (shrimp), Siu Mai (shrimp – poultry), Dim sum with vegetables and steamed Brioche with lacquered pork will soon have no more secrets…

The workshop continues with a tasting of appetizers accompanied by a glass of wine or champagne offered in agreement by our team of sommeliers at the Table des Chefs, in the heart of the LiLi kitchens.

The participants of the various programs of The Peninsula Paris Academy will therefore have the chance to be in contact with the talents of this iconic palace, sharing, for a few hours, all their knowledge, in the refinement and elegance specific to Peninsula Homes.
