Perfect and easy food after a long night.
My college days are long gone. And they’ve never really been this crazy to begin with. But remember you were young: you stayed up late, you probably ate three too many, you are hungry but you are able to prepare only the most basic foods.
If you’re in that (modified) mindset, then this viral TikTok recipe(opens in a new tab) for a tortilla pizza that’s pure gold. It’s perfect trash, drunk food, and I mean that as a compliment. The video, posted on TikTok by @adriannamagnone(opens in a new tab)has racked up over 10 million views.
It’s ostensibly aimed at low-carb dieters — swapping tortillas for crust — but it’s really best viewed as a cheap, gooey, greasy, and simple meal. It’s not healthy or really even so tasty. But it’s still good. One of those things you hate yourself for loving.
Either way, here’s what you need to know to make the recipe.

2 flour tortillas

Grated mozzarella cheese, about 1 cup

1 clove garlic, minced

Olive oil, about a tablespoon

Jar marinara or pizza sauce, about 1/4 cup

Directions

Place a tortilla in the basket of your air fryer.

Brush tortilla with oil and garlic.

Place about half of the cheese on top of the tortilla, then cover with the other tortilla.

Brush the top tortilla with pizza sauce.

Top the tortilla in sauce with the other half of the cheese.

Sprinkle Italian seasoning over tortilla pizza.

Air fry at 400 degrees for about six minutes. Enjoy!

The details
It’s simple. Just like other TikTok air fryer recipes, this is a quick and hacky recipe. The only real change I would suggest is that you add your minced garlic directly to the oil, that way you brush the tortilla with garlic and oil at the same time. To be fair, neither the oil nor the garlic was really necessary, so if you want to skip that step altogether, that’s really cool. You’ll just miss the light garlic bread vibe.
Otherwise, this recipe is impossible to mess up. Make a quesadilla in your air fryer. Coat it with sauce. Then lay in more cheese, some herbs and air fry.
The end product is quite similar to a fast food thin crust pizza. Think Domino’s at 1 a.m. The tortillas are thin and crispy, the cheese is overflowing, the sauce, because it’s store bought, is almost certainly too sweet. You feel like you’re eating pizza knowing you’re eating an abomination. Guess that would be perfect for me at 21 after drinking half a dozen Natty Bo’s(opens in a new tab). It would probably also be great for children, since drunk people and children have a similar palate.
But, even being sober in the middle of the day, I was quite surprised at how much I liked this recipe. Of course, it’s basic. But what’s not to love about melty cheese and crispy tortillas? I even liked that the six minutes of cooking time scorched the top layer of cheese a bit. It really reminded me of nostalgia, not the good pizza you’d get at a kid’s birthday party. This is what my final product looked like. It was pretty much identical to the source material.

I’m not saying this recipe will soon make its way into my dinner rotation like the other AirFryDay recipes – my chicken sandwich and wing recipes come to mind – but it’s really not bad. Who knows? Maybe one day I’ll feel less… old… and go to bars. I’ll be home at 1:00 a.m. and all I’ll have is tortillas, gravy, and cheese. And I will know exactly what to do.
