Acacia flower donuts: what’s original?
If summer and autumn fill us with fruits and vegetables, spring is generous in flowers and aromas. Like those of lilac, lime blossom, elderberry! We know how to enjoy it: syrup, herbal tea, wine, liquor. Lots of recipes with elderflowers, but donuts of acacia flowers, it’s beyond imagination. I don’t know about you, but when I came across the recipes for this treat, I thought we were kidding. Of course, I did a search to find that I was the layman. The fragrance and sweet taste of acacia flowers are used in a crystallized state in baking and for decorating cakes. If we “leave” the kitchen, we will discover their therapeutic properties in case of bad digestion, diarrhea, sore throat etc. As always, you have to be informed about the downsides: seasonal toxicity for example. So, remember, acacia flowers are only edible in the spring when they can be included in fruit salads, jams, jellies and donuts.
Where does the story of acacia flower fritters begin?
In a blog I found curious details about the tree and its flowers. In reality, the real acacias of the mimosaceae family grow in Morocco, on rocky ground, while the trees that are familiar to us are called locusts. Take a close look at their grapes! What do they look like to you? But of course, they are made up of small beans and are reminiscent of wisteria, broom, lentils, beans, alfalfa and peas. Robinia bears the name of the botanist Jean Robin who introduced it to the court of Henri IV. This tree grows quickly and its roots hold firm in unstable ground in a sloping garden.
If bees love white clusters and acacia honey is good for sore throats and other ailments, why not include them in sweet or savory acacia blossom fritters.

How about surprising your mom for Mother’s Day coming up! A cheap “gift”, easy to prepare and a guaranteed surprise!
First get the flowers in a park, away from polluted areas! Be careful when picking, because the ugly needles on the branches can hurt you. And also, during the preparation, take care of the cleanliness so as not to scatter seeds everywhere!
- 200g flour and baking powder
- 1 glass of cold beer (200 ml)
- 1 egg and 200ml very cold sparkling water or orange blossom water
- peanut oil
- sugar or honey
Mix the flour with the baking powder. Gradually add the beer (you can replace the beer with milk). Add the egg and the orange blossom water to obtain a relatively liquid paste. It must also be very cold to achieve the thermal shock when you dip the flowers in hot oil to brown them. Place the acacia flower fritters on a paper towel to absorb the excess oil. They should become crispy and dry. Sprinkle with icing sugar and serve warm!
The ingredients you need are: 20 bunches of acacia flowers, 1 cup (150g) all purpose flour, 1½ cups ice cold sparkling water as needed, a pinch of salt, peanut oil for frying, sea salt for sprinkling.
Make sure the flowers are free of insects. Mix flour and salt in a bowl. Slowly add sparkling water, stirring with a whisk until most of the lumps are gone. Pour just over an inch of peanut oil into a large saucepan and heat to 175°C. Hold the flowers by the stems while dipping them in the paste. Carefully drain off any excess batter before frying. In order not to overload the pan, lay the flowers in batches. Once cooked on one side, flip them over with a slotted spoon, until lightly browned.
Remove the donuts from the oil and place them on a dish lined with paper towel. Sprinkle with salt for a tasty and crispy appetizer.
Delight your taste buds with a recipe for crispy donuts of acacia flowers with milk and grated lemon!
Although you have picked your acacia flowers in a park far from urban pollution, it is recommended to wash them well with tap water. You have to dry them afterwards. The ingredients for about 20 donuts are: 2 eggs, 200 g flour 00, 100 ml sparkling water, 200 ml whole milk, 130 g fresh acacia flowers, 80 g caster sugar, 1/2 sachet of yeast, 1 pinch of salt, the zest of a lemon, frying oil.
Prepare a paste by mixing the eggs with the sugar, without beating them. Add salt, lemon zest and flour. Mix well and start incorporating the liquid ingredients little by little. Leave the resulting paste to rest for 10 minutes.
In a skillet with high sides, put enough oil for frying and heat. Dip the acacia bunches one by one and drain before putting in the pan. Fry on both sides and place on a plate lined with paper towel. Donuts are also excellent served hot or cold. You can sprinkle them with powdered sugar or honey if you prefer.
