Stéphanie Guillemette’s quinoa pie dough recipe

Ingredients for a pie for 4 people:

  • 150g brown rice flour
  • 350g cold cooked quinoa
  • 30g melted coconut oil
  • 80g of water
  • 1 teaspoon of salt


Preparation :

start with preheat your oven at 180°C (th.6).
Mix all the ingredients in a bowl until well incorporated.
Tamp the dough in the bottom of a springform pan and prick it with a fork to prevent it from swelling.
Cover the dough with baking paper, then fill it with legumes (beans, lentils…) or ceramic balls (called pie weights) to prevent it from deforming during cooking.
Bake for 20 minutes.
Afterwards, raise the temperature at 200°c (th.6-7) and prolong the cooking 5 minutes.
